Excellent topic, and kudos for writing about it. At Panatrack, our software plays very well with cloud-based instances of GP. But the question remains how many people will opt for true SaaS as opposed to private cloud or a managed solution in a public cloud like Azure. You a good job here pointing out that not everyone wants multi-tenant SaaS. But do we truly understand the lifecycle cost implicatons of SaaS? I must have cited this blog post by David Kellog a hundred times by now in pointing out the cost impacts of SaaS. http://kellblog.com/2011/01/26/perpetual-money-vs-perpetual-license-subscription-saas-and-perpetual-business-models/ I would contend that cost is a DISINCENTIVE to consider SaaS as cost under the "perpetual money model" will be higher. But if you are starting off with no hardware or IT function, or if you want to keep a software purchase off the CAPEX to ease approvals, SaaS can be attractive.
